Try this great recipe!

Chicken Salad - The easy and elegant way!

(If you are like most of us, you don't have time to prepare healthy and attractive meals. We've been working hard to find shortcuts that don't involve having to spend a fortune or having to give into the allure of high-fat or non-nutritious foods.)


TIME INVOLVED: 20 minutes - start to finish.
A LIGHT, HEALTHY DINNER FOR FOUR.

THE MENU
Chicken salad served on a large oval serving platter
Crusty Bread sliced and arranged on a bread tray and drizzled with olive oil and parmesan cheese
Fruit salad served in a pedestal bowl

SHOPPING LIST
1 Rotisserie Chicken from the grocery store.
1 bag of organic lettuces.
1 bottle of Newman's Own Balsamic Vinegarette Salad Dressing.
1 bag of frozen fruit.
1 package of fresh grapes or strawberries
2 bananas
1 loaf of crusty bread
1 small bottle of olive oil
1 small container of parmesan cheese

DIRECTIONS

CHICKEN SALAD
1. Slice the chicken into small pieces.
2. Wash and dry the lettuces.
3. Take a large Fiesta oval platter out of your cupboard and line it with the lettuces.
4. Arrange the chicken on top of the large oval platter.
5. Drizzle the lettuce and the chicken with the salad dressing.
FRUIT SALAD
1. Take out a pedestal bowl
2. Pour the frozen fruit into the pedestal bowl
3. Cut the peaches in half and pour them on top of the frozen fruit.
4. Slice the bananas and the grapes or strawberries and put them on top of the frozen fruit.
5. Let the fruit stay on the counter for at least one hour prior to eating so that there will be time for it to de-frost.
BREAD
1. Slice the bread into pieces no more than four inches by 1/2 inch.
2. Arrange the bread slices on a bread tray.
3. Pour a small amount of olive oil over the bread.
4. Sprinke the bread with Parmesan cheese.
5. Turn the oven to 350 degrees Fahrenheit.
6. When it is about 10 minutes before you are ready to eat, place the bread tray in the oven and let the pieces toast.
THE TABLE
1. Set each place at the table with luncheon plates and fruit bowls and brightly-colored napkins if you have them.
